Ingredients

  • 2 ½ cups buttermilk (or 2 ¼ cups milk plus 2 tbsp lemon juice)
  • 1 ½ cups masa harina
  • 2 tsp baking powder
  • ½ tsp kosher salt
  • 2 large eggs
  • 1/3 cup melted butter (about 5 tbsp), plus extra for greasing
  • ¼ cup honey (for sweetness, no refined sugar)

Directions

  1. If making buttermilk, combine milk and lemon juice, then let stand for about 5 minutes.
  2. In a medium bowl, whisk together masa harina, baking powder, and salt to remove lumps.
  3. In another bowl, whisk eggs with the buttermilk, melted butter, and honey until smooth.
  4. Add dry ingredients to the wet mixture and stir just until no dry lumps remain.
  5. Heat a non-stick pan over medium-high and lightly grease with butter.
  6. Pour about ¼ cup batter per pancake, spreading it thin (~¼ inch thick).
  7. Cook until edges are crispy and browned (~2 minutes), then flip and cook another ~2 minutes.
  8. Serve hot with your favorite toppings.
