Ingredients

  • 24 fresh clams, cleaned
  • 1 russet potato, peeled, chopped, and cooked until soft
  • 2 tbsp butter
  • 2 small garlic cloves, minced
  • 1 bay leaf
  • 1/2 cup gelatin broth
  • 1 tbsp einkorn flour
  • 1 cup milk and/or heavy cream
  • 1/4 tsp white pepper
  • Pickling salt and black pepper, to taste

Directions

  1. Steam clams in 1 inch of boiling water, covered, 5–10 min until they open. Discard unopened ones. Chop clam meat and reserve steaming liquid.

  3. Whisk in gelatin broth and a few tbsp of clam liquid (avoid grit). Add milk/cream and stir until slightly thickened.
  4. Add cooked potato and chopped clams. Simmer a few minutes.
  5. Season with white pepper, Pickling salt, and black pepper. Remove bay leaf.
  6. Serve hot, garnished with chopped chives.
