Ingredients

  • 4 large eggs (separated)
  • 1 tablespoon caster sugar
  • 2 tablespoons single cream
  • 1/2 oz butter
  • jam of choice
  • icing sugar

Directions

  1. Mix the egg yolks with the sugar and cream.
  2. Warm 2-3 tablespoons of the jam in a small saucepan.
  3. Whip the whites to a firm snow, then cut and fold into the yolk mixture.
  4. Set the oven to 400°F.
  5. Heat the omelet pan until moderately hot, and put skewers in a flame until red hot.
  6. Drop the butter into the pan and, while still foaming, add the egg mixture. Spread it out in the pan and cook over moderate heat for less than 1 minute to let the bottom brown. Do not stir during this time.
  7. Slide the pan into the preheated oven to set the top.
  8. Spread the omelet quickly with jam, fold over with a palette knife, then turn or slide onto a hot dish. Dredge with icing sugar and mark a lattice across the top with the red-hot skewers.
