Ingredients

  • 1 pint blueberries
  • 2 tbsp sugar
  • Juice and zest of 1 lemon
  • 1/2 cup water
  • 4 gelatin sheets
  • 2 cups heavy cream
  • 1/2 cup sugar
  • 1 tsp vanilla extract

Directions

  1. Combine blueberries, 2 tbsp sugar, lemon juice, zest, and water in a pot. Simmer until the berries break down. Mash lightly, leave some chunks, and chill the sauce.
  2. Bloom gelatin in cold water until soft. Squeeze out excess water.
  3. Warm cream with 1/2 cup sugar and vanilla until steaming, not boiling. Stir in gelatin until dissolved.
  4. Pour into ramekins. Refrigerate at least 6 hours, preferably overnight.
  5. To serve, dip each ramekin briefly in hot water, invert onto a plate, and spoon blueberry sauce over the top.
