Ingredients

  • 1 ox bung, soaked for 4 hours and cleaned
  • 3 lbs lamb’s pluck (heart, lungs, and liver)
  • 1 lb beef or lamb trimmings (or stewing steak)
  • 7 oz suet
  • 1 lb coarse oatmeal

Seasoning (adjust to taste):

  • 2 tbsp ground black pepper
  • 1 tsp finely grated nutmeg
  • 4 tsp freshly ground coriander seeds
  • 4 tsp fine sea salt

Directions

  1. Rinse the lamb pluck in cold water. Trim fat and cut away the windpipe.
  2. Place pluck in a pot and cover with cold water. Keep lungs submerged with a plate. Bring to boil, skim, then simmer gently for 2 hours.
  3. Remove meat, rinse in cold water, and let cool.
  4. Strain and reduce cooking liquid to about 2–4 cups stock. Cool.
  5. Dice heart and lungs finely. Grate liver. Dice trimmings. Mix with suet, oatmeal, and spices.
  6. Add cooled stock (up to 4 cups total) to mixture and combine well.
  7. Test seasoning by pan-frying a spoonful. Adjust salt/spices if needed.
  8. Spoon mixture into soaked ox bung, loosely (filling swells when cooked). Leave space at each end.
  9. Expel air, pinch and tie ends with string, cutting excess. Repeat for remaining filling.
  10. Before cooking, pierce haggis several times with a needle. Place in cold water, bring to boil, and simmer 1.5–2 hours until internal temp reaches 165 °F.
  11. Serve with mashed potatoes and swede (“neeps and tatties”).
