Ingredients
Dough
- 5 tbsp butter, room temperature
- 1/4 cup brown sugar, packed
- 1 tbsp honey
- 1 tbsp orange juice
- Zest of 1 orange
- 2 egg yolks
- 2 1/4 cups masa harina (heirloom corn)
Filling
- 1 lb dried pitted dates, chopped
- 2 tbsp unsweetened applesauce
- 2 1/2 tbsp orange juice
- 1/2 tbsp honey
- Zest of 1/2 orange
Directions
- Cream butter, brown sugar, and honey until fluffy. Add orange juice, zest, and yolks. Mix in masa harina until just combined. Shape into a disk, wrap, and chill about 1 hour.
- Process dates with applesauce, orange juice, honey, and orange zest until a thick paste forms. Chill slightly if too soft to spread.
- Roll dough into a rectangle (~7×14 inches). Pipe date filling down the center. Fold dough over to encase filling, sealing edges with a little water.
- Place seam-side down on a baking sheet, chill briefly, then slice into ~1–1½-inch cookies.
- Bake at 350°F for 14–18 minutes until golden. Cool on a wire rack, then store airtight.
